Short answer
For Hanafis, no: oyster sauce is made from oyster extract, and the Hanafi school does not eat shellfish. For the Shafi'i, Maliki and Hanbali schools it is halal if nothing else in it is haram. Vegetarian oyster sauce, made from mushrooms, is halal for everyone.
A sauce made from oyster extract takes the ruling of oysters, which are makruh tahrimi in the Hanafi school, so Hanafis avoid it and dishes cooked with it.
Other madhhabs
- Shafi'i
- Oyster sauce is halal, since oysters are lawful sea animals, provided nothing else in it is haram.
- Maliki
- Oyster sauce is halal, since all sea animals are lawful.
- Hanbali
- Oyster sauce is halal, since oysters are lawful sea animals.
Explanation
Oyster sauce is a thick, dark, savoury sauce made by cooking down oysters or oyster extract with sugar, salt and cornflour. It is a base flavour in Cantonese, Thai and Vietnamese cooking: beef with broccoli, chow mein, pad see ew and stir-fried greens.
The ruling follows the oyster. In the Hanafi school only fish is eaten from the sea, so oysters are not eaten, and neither is a sauce whose main flavour comes from them (see are oysters halal). In the other three schools oysters are halal, and so is the sauce.
In restaurants: many stir-fries use oyster sauce even when the menu does not say so. Ask, or order dishes made without it. Some kitchens also add Shaoxing rice wine, which is haram for everyone (see food cooked with wine).
At home: use vegetarian or mushroom oyster sauce, often sold as vegetarian stir-fry sauce. Read the label, because some oyster-flavoured sauces still contain oyster extract. Hoisin sauce is usually made from soybeans, sugar, garlic and spices with no oyster, so it is generally halal; check it for added wine or animal ingredients.

Quran, Surah Al-Maaida 5:96
Lawful to you is game from the sea and its food as provision for you and the travelers, but forbidden to you is game from the land as long as you are in the state of ihram. And fear Allah to whom you will be gathered.
The verse on sea game, read by the Hanafis as fish only.
Quran, Surah Al-A'raaf 7:157
Those who follow the Messenger, the unlettered prophet, whom they find written in what they have of the Torah and the Gospel, who enjoins upon them what is right and forbids them what is wrong and makes lawful for them the good things and prohibits for them the evil and relieves them of their burden and the shackles which were upon them. So they who have believed in him, honored him, supported him and followed the light which was sent down with him - it is those who will be the successful.
The ban on khaba'ith, part of the Hanafi reasoning.
Sunan Ibn Majah 3314
Graded sahih...
"Two dead things and two bloods have been made lawful for us."
Names fish and locusts as the lawful dead.
Where the ruling is recorded
- al-Hidaya, Kitab al-Dhaba'ih, on water animals. Nothing from the water is eaten except fish.
- Mukhtasar Khalil with al-Sharh al-Kabir, Bab al-Mubah, on permitted foods. All sea animals are lawful in the Maliki school.
